I can not believe the crap the general public falls for. this is pretty much like that pink slime thing that got blown out of proportion. (i still get asked if I use pink slime at least once a week. I never even heard of the stuff until 2 months ago)_.
Watching this video I think "huh? are you saying he glued together a bunch of beef tenderloin parts?" wouldn't it be easier to just buy a cheaper steak and marinade it or something and try to pass it off as a quality steak?
People will believe anything. I am sure this kind of crap gets pulled in some places but not THAT much.
All of the prime and high-choice beef that has come under my knife has been held together only by good old fashioned American feed.
I will admit that sometimes I'll remove a segment of a paddle-bone where the rib gets all floppy but I have never seen that very much in prime or high-choice except in the case of non-beef breeds like holstein and jersey, both of which marble-up well but with really small longissimus dorsi.
