Organic Everything


The shop where I work has decided to get NOFA certifcation for organic meat proccessing and our attached farm (pigs). So I was wondering if A)anyone has experience with this process and there for advice positive or otherwise and B) Any advice or pitfalls to avoid that sort of thing. Thanks in advance

many customers buy organic because 1, they can afford it, 2, they are paranoid, and the word organic calms them, 3, they are driven by strong beliefs, for example I recently heard a family Dr. tell someone in the family to ONLY by organic meats-why? because the family memeber is in the early stages of parkinsons disease, and the dr said what may have caused the parkinsons is all the pesticides on the fruits, veggies, and cattle feed-once consumed, gets in the body and the body has a very very difficult time with the residues.
and yes- many folks think-because its organic, it has to be healthier-in a perfect world more should be organic


You are in a good venue to sell organics-Id sell them by the sides and quarters-list what you get out of them-yes it will be expensive, but if you sell -lets say organic rib-eyes next to choice, the organic , may be 4.00 more perlb or more

selling by the side/quarters, you dont get that direct comparison, and most are willing to pay a bit more (that want organics)

be careful of the signage that supplier may give you-hyping organic meats-many program signs-slam the hell out of anything other than organic-potentially hurting your sales of other meats In hyping organic meats-dont chit on the other meats-because what if they dont like that organic beef, and want to go back to your other grades.
