How many of you remember merchandising Ham Roast for Easter ?
This use to be a big seller till they started selling us Ham Butts & Portions.
In a lot of markets I worked in in the old days we sold more butts portions & butt halfs then shanks. An a lot of Ham Roast.
One of the tricks I used to get rid of the ham shanks in those markets were to cut one ham roast, then take the lean side off the shank , Slice it for breakfast man and take the shank side and slice it a half inch or better , put 4 to 6 pieces in a tray for breakfast ham steak. put the rest into ham hocks, taking the lean part for extra lean hocks & ham cubes, the rest into regular hocks. The bigger portions I would make sliced 5th out of. Sometimes maybe getting only three packs out of one.
Now all you have to do is open the box, price them, what don't sell reduced them.
Which brings up a question, what do you do with ham portions & butts that are about to go out of date?
Cut them in half and tray them up. Most of our suppliers give credit for dated items that we dont sell. If there is a great deal of them about to become dated we mark them down and offer them at a great price. I would rather receive the cost back than the small amount that the suppliers give us in credit for dated items
