Challenging the Meat Industry to Break the Pattern
As part of Midan’s brand new research platform, “The Consumers’ Case,” Breaking the Pattern is the first of an ongoing series of market research studies designed to educate meat industry leaders on the constantly evolving consumer. Midan’s goal for this new platform is to transform the meat department from the cold “sea of red” to an engaging shopping experience for tomorrow’s consumer. " THAT IS SCARY !!"
I can see the day signs on the meatcase will have qr codes meaning- say bnls chuck roasts are on sale- if a customer scans the qr code on the sign with their cell phone-then a video will pop up and tell you how to cook it
if we were wise- many of us would jump on the technology early, another few years, these codes will be right in the ads
I set one store up with a digital picture frame-cooking recipes of the sale items over the items in the case- I wanted to have motion detector picture frames, that would automatically go on, and show a video of what to do with the product- but - I think these codes will work better-because 5 videos and audio wont be going at once- if you have earplugs, you can listen to this just by yourself
This can play a bigtime advantage to independent stores and butcher shops, because then (in video) they can illustrate how fresh their product is- and not shipped in from 100's of miles away and not injected/enhanced
As far as supermarket format-yes it is chaotic, and always has been- a customer approaches a meatcase, makes a "center of the plate" entree decision, then turns around to the scattered 10,000 meal meal connectors/sides in the grocery dept.
The challenge is- refrigeration cases to grocery meal connectors/sides/fixins that are dry
it would be interesting, to set up a fresh chicken case- with displays of chicken sides all around it, same with pork, and beef- but flow of product,,,,,will look chaotic
I read somewhere- that 98% of shoppers now freeze meats-30 yrs ago- much lower percent-stigma that meat tastes differently (like seafood) if frozen- now, not so much A store owner once asked me- how i would i format a store-meat department differently- I liked the coffin cases in the aisles-with grocery shelves over the product with meal connectors- if you had chicken-then you have pasta and chicken entree-meals sold over the chicken-you'd have shakenbake , rice, any and all that connect in chicken entrees, then push recipes-when all the ingredients are nearby
what would be interesting, is- what if the coffin cases were frozen? you could have better prices, because of no shrink- 98% of customers will freeze meats now-so why not? because of eye-appeal- frozen meat doesnt look all that attractive-but it's an interesting concept- it actually can be fresher- because it wont warm as fast on a hot day-less bacterial growth
also, could a department have qr codes that would go to beautiful meat pictures and they could pick out what they want-absolutely-this day is coming-like a flyer, but more item specific with pictures/videos on the product
think of pizza hut, or dominos-if they had a virtual site, where you could make your owned pizza's -even if it were animated-be better if a couple of babes were on there and you could instruct them what to do-how you want your pizza-and you have choices along the way, to what you want- once it's finished-you are done-the order will go-this will be personalised engagement marketing
how could we do that in a meat dept??? well, say it's bbq season, someone wants some nice steaks for the grill- they scan a qr code on your flyer and it goes to a video- of you recommending bqq steaks, and actually cutting them
again-this can be a huge advanatage to smaller markets, because its done on-site,,,think of your own sausage-you can actually show them how its made if you sell whole primals- you have a qr code and it shows you, telling/showing the customer how to cut it up
