when I first started this business, on the Gulf Coast this was what we called a yankee pot roast

Well Ladies and gents at last I'm able to show you a rolled full brisket ,this is to me is the tastest meat on the animal.
Yes I grant you its a sloooooow roast ,but hell it's moreish.
I buy several of these a week,but I don't always roll them,they go to a small zoo we have here in Borth, I know it's such a waste but hayho.
I did try and put this in tied and sliced .but couldn't due to the size of pixel on my camara ,changed now.
Another thanks to Leon who made this possible.

From what's shown there, we'd separately cut one brisket maybe cut in half, one skirt steak, 6-7 short ribs (#2-8) and the rest ground up.

podria to make a video of the tied one of that piece? he is impressive that a chest is so round and so perfect greetings from espaaña friend mine!

seems babel fish lost a little of that lol

I have broken down a fore of beef ,the way we do our here,only the pictures have not come out in the order I wish to have postered them, but I sure you will know which one should follow which.

This has been done on my phone so pardon the quality.

I miss cutting quarters, but since I have no rail system my back sure does not miss me hauling them around. It really is true when they say youth is wasted on the young, or is it when I was young I was wasted ? What is the first to go when you get old? eyes? hearing? I cant remember.....lol
