If anyone is interested, the next Master Meat Crafter Class will soon be accepting applications.
This class is the first of its kind. It is a 2 year program offered at the University Wisconsin-Madison. It is an in depth look into all aspects of meat processing with hands on demonstrations.
I am a member of the first class, if all goes well we will be "graduating" in January 2012. I highly recomend you follow the link and read what its all about. Dr. Jeff Sindelar is a very knowledgable man, and we are very fortunate to have him on our side!
