cutting frozen turkeys?


Ok, had a lady that wanted a honeysuckle white turkey cut it half today... told her NO as the saw had already been broken down and sanitized for the day....and her reasoning was, I like to get a big turkey so I can cook some now and some later....she had a 26 lb one!!!...now common sense thinking , get 2 12lb ones and cook the same amount of meat??????? 

so, question is, do any of you cut frozen turkeys? and if so, what about the wire leg retainer?

I have never cut up turkeys before, but I guess I am going to have to call my district manager to find out the protocol on this....

There is no accounting for how some people think when it comes to cooking. We would all buy the two smaller birds but.....
I dont like to cut frozen turkeys, mainly because I dont sell frozen turkeys. This means they usually bought it at another store and were too afraid to ask them to cut it for them. The giveaway is the bag they bring it into my store in, and the same store name on the tag of the bird. When I do cut it for them I charge them $2. I split it to the end of the breast no farther. I let them know I cant cut thru that metal on my saw and they will have to hack around it at home.
I do sell fresh turkeys and will cut them at no charge. Thats always been my theory. They buy it from me I cut it further for them no charge. They buy it someplace else and want me to cut it, then I have to charge. They all understand.

All my frozen turkeys have plastic leg bands so no problem
As long as it never left the store I will do whatever is asked but as soon as it leaves the store I can't touch it

yes i do split frozen turkeys when asked and it doesn't happen much anymore for some reason. but if they have that steel ring on the legs i can get it off with alot of prying and a screw driver but i got pretty good at it. it still scares me when i take it threw the saw i always expect it to flip and hit me in the face .. you got to be ready for that and yes iw ould rather not do it either but i do it anyway. i also thaw and cut up any turkeys we didn't sell at thanksgiving with my knife.

i do it i do what ever a customer wants a sale is a sale and a 26 lbs turkey would be a good sale
