Back in 1979-1981 I used to work at a small family meat market. One company that delivered meat to us always had met that was headed to San Quentin Prison. It was whole rounds. Not boxed. Shank still attached. Maybe other things too. So obviously there were people cutting meat at San Quentin Prison in the 70s and 80s. Must have been the most trusted prisoners for them to actually be allowed to handle knives. But I'm sure inventory is done before the leave the cutting area.

Great video Lady Filet. I have saw job postings for these prison meat cutting jobs. Nver knoew how that all worked. I think its great giving them a trade to learn and have something to do when they get out.
I have worked in the industry since 1970. In 1989 I went to work for the NYS Dept. Of Corrections,spent a year working in the mess hall at Green Haven CF, a max jail. We had inmate meat cutters,they would work in a secure room
Separate from all other inmates, the knives are secured to the table with cable. Dangerous for the officer, yes, but that's his job.
