I never heard of any dog needing a cut proof vest. Do the bad guys come at the dogs with a knife? Do they have helmets too? Do you mean steel or kevlar? Anyway, if you're serious, I'd find out who made the full body suits scuba divers wear for protection against sharks. I'd think a mesh vest would hinder the dog more than help it, but you're the expert.
i think a mesh glove material would be very ideal for that use . it doesn't cling tightly and you can't get the point of blade through it. it could very handy in protecting the dogs internal organ from stab wounds in my opinion. i don't see it covering the face and eyes though that area will still be vulerable.
