i just got my first market a few months ago and now i am leavin that one for one alot closer. from 82 miles a day to 20. im gald they come and asked me to run it, the only thing is im goin from $65,000 a week to $40,000 a week. anybody with a smaller market got some good advice???
Yep, used to work in a market than ran about $32k a week. This is really all you need to know: Value everything and be on the money with your ordering. Know what you sell and only order what you need. You'll be riding a fine line every week on being out and just having enough.
Our store only does about 35- 40 a week and I went from a store that did 80. Its a real change. Cut to fill is our motto. Like evryone else said keep your inventory light. I have my fresh meat order down to the piece now unless its a sale item. Good luck and I hope you do well!
