Soul Food Farm's Day of Artisan Butchery October 15, 2011.
This was an incredible day of food and festivities, topped off with a butchery demonstration by some of the best.
Avedano's Butcher Shop in San Francisco, Slow Food Solano and Soul Food Farm come together again to honor the work of Master Butchers and the beauty of grassfeed local beef.
The event featured a grass feed steer from Agricola Grassfed Beef Ranch with top Bay Area chefs such as J.W. Foster of the Fairmont Hotel, Tia Harrison of Sociale and Paul Schroeder of Montis. They cooked half of the aged beef and John Fink of the Whole Beast grilled and talked about open fire cooking. All to be shared over artisan micro brews from La Trappe and Pacific Brewing laboratory.
At 3 p.m. master butchers, Dave the Butcher, Chris Arentz , Angela Wilson of Avedano's, Zach Gero from Shoppers Corner and Josh Kleinsmith from Piedmont Grocery demonstrated how to break down the second half of the same steer describing both American cuts and Italian cuts. The demo was followed by a drawing of the cuts of beef.
This event is held each year as a fund raiser to support local farms and agricultural projects in the Bay Area.
