ive been in my new market for about 2 months now, i went from a store out in the country to rite outside atlanta what i dont git is why are these people want'n so much ground pork?? any anwsers???hmm

because they have their own recipes for homemade sausage and they want to make it themselves

and it is cheaper............alotta recipes now are also recommending mixing different grinds, for patties pastas meat loafs meat balls

I have only had calls for ground pork because thye want to make meat loaf. They are all excited to use the oven again now that cooler weather is here.

Ground pork is the cheapest, generally. It's also very flavorful and suits a ton of recipes. I don't know your specific local demographics but a strong mid western and asian population will certainly increase your pork outflow. In my experience.

We sell into 5 Farmers Markets and several Food Coops in addition to our direct sales. Demographics are big. Also, how long have you had this shop? It seems like it takes awhhile to get a good feel for the seasonality as well. Sales of a cut are based ona lot of things and often never any single thing IMO. Challenge is taking an entire animal and selling it without anything building up
