well it depends on the price of the supplier I prefer to get choice but often have to settle for select. my round and knuckles are usually choice but my strips and short loin are always select. I get moestly swift or national beef. occassional they send IBP
Used to cut only IBP Choice, but that was years ago. Went with National Select for a few years, now on a program with Swift 1855 Black Angus Choice. Just cant beat the flavor and tenderness, strips that melt under the pressure of your dinner fork. Price is not cheap but the customers love it and keep coming back for it and bringing friends with them. I also buy sides of Grass Fed and finished beef. Most customers say thats what they want til the eat it. Then they are back for the 1855.

Choice Angus and select, like the quality of the excel, IBP is not trimmed very well , and National doesn't hold up if you have it left over for a week , has a problem with the edges under the ribeye turning green.
Meyer Ranch CAB choice and Prime. Grass Fed Choice. No less. I've worked with Excel, National and IBP in the past but never again. Their consistency and quality is no good and sometimes horrible. I can't afford to work with subpar providers.
Grain finished choice or prime, grass-fed organic (not graded, but would definitely be select), and grass-fed (not organic, but 100% grass-fed and rated choice).
