well thank you. I got to say though I am not 100% confident about it. i didn't want to clean the whole thing up because they didn't tell me to ..instead i just trimmed down the big chunks of fat..opened it up and removed the big chunk of fat inside..took the silver off the bottom and the brown off the top..seasoned it really good (or i hope not to much) inside and outside then stitched it up tight as a clam and then tied the whole thing around the outside. this is a first time customer asking for this and I really hope they are happy with it. i am worried though they wanted approiximately 60 lbs but the stupid supplier sent me a 45 pounder i hope it ll do. i didn't have time to order another one. we don't carry whole round steak so I never order them. god i hope they are happy with it.
well they did think it wasn't quite enough and asked to buy an inside round to go with it. just whole i didn't have to season that . and then they asked for a whole rib eye. (called it prime rib) but i didn't correct them. so it turned about to be about a 350 dollar sale
