I,m thinkin a slicer-but that stock entering the blade may have a bone?Saw a documentary about meat and some slicers in it looked similar to this.

I take it that this is the red slicer that was in the meat shop video ??? it's not a modern slicer,amazing they have one.

my god Larry you going back to the beginning of time with this one lol  When I first was with A&P they roll the back of every chuck, I seen a couple old timers at that time use one. I tried it but didn't like the damn thing on my finger. I could tie and pick up my knife and cut faster than trying to use that, plus it would roll on your finger. I think the last man I seen use one was around 64.

A note, in the carpet mills here they use those a lot still.

 that thing would annoy me.........i can tie fast while holding my knife not sure how i would do with that fancy ruler..lol

Anyway, we have a roast tying machine where I work. We all really like it.

 No. Not a jet netter.  I understand they were made for use at post offices to tie boxes back when they did that a lot. Now it's just tape.

The machine holds a big spool of string and there's a foot switch that you step on. It puts string around and cuts it. You move the roast along and keep it going.
