Milwaukee Butts & Pork Back Bones


Milwaukee Butts—Same as Boston butts but has neck bone in. In great demand in Milwaukee and vicinity.

 

 

Pork Back Bones—Is the backbone of the hog and is sold for same purpose as spareribs.

The first two to three cuts off the Rib End is where the country style ribs we use today came from around the late 50's , during that period we started spliting the pieces to make it easier to grill or bake off in a oven

I grew up in Milwaukee and we never had a Milwaukee Butts.....just Boston Butts

I have never heard of Milwaukee Butts, related to Milwaukee brewers? Milwaukees Best beer? So I have to wonder if you pull the neck bones off before you cut into steaks or leave it on? Get countrystyle ribs off the ends? Just curious me...

Dudes, pork neck bones are wicked awesome barbequed over applewood. Just like ribs. SUPER tasty. I live in Iowa, so finding neck bones isn't too hard. Since there are 6 hogs for every 1 person.
