Clean up man only had 30 mins left to clean up, we needed some pork chops, both saws were clean, some of the grocery guys was laughing at me because I had to cut chops and clean up saw, I FOOLED THEM !!!

Most markets don't even have a hand saw nowadays. No cleavers either (in moist markets)

the meat saw is mine, I also have my own cleaver, I like to keep them around my market to play with the young ones with  lol

most cut one thing with the saw and they ready to get back on the hobart lol

I think a cleaver and hand saw are must have items in shops where it's so important to have the band saw super clean at the end of the day. If the saw is clean and taken apart (many markets demand you leave it apart for inspection), then what do you do if someone wants a special cut? Either way, you're in trouble. Trouble for a dirty saw or trouble for saying no to a customer. The answer is what Leon did. However, how many meat cutters have their own hand saw? Very markets have them, so the clean saw thing is a real problem.

I understand, Leon. I'm a lefty myself.
Our market has to leave the saw apart after cleaning but I do have a cleaver and hand saw.
I was blessed to be taught old school.

my first job in butchering was cutting pork neckbones on a block with a cleaver. got good at it after while.

I have done this in my time at IGA... but I am horrendously new school....
I have maybe 7 months experience under my belt in meat cutting, and I did this... on a whim. lol
