I think I've seen those with a big piece of fat right there where the hole is. It's fat or something that looks like fat. Obviously not supposed to naturally be there. Maybe it's an "injection site blemish" that you (Leon) wrote about in the old MSN group. Just a golf ball sized piece of something the color and texture of fat. I've heard it called a bruise. Anyway, that's my guess. They all were bad in that way and the wholesalers removed it. Should have been ground by the wholesalers if they knew of the problem.

I Questioned the Excel rep about this and he said that is scar tissue from an injection, and quality control should have plulled these , used to see this in the chuck before the changed the injection site on the animal

Oh, you asked "have we seen it", not what is it?
I think I've seen one or two mutilated like that.

Leon I have seen them,We cut rump roast out of them. I haven"t seen any with the hole on top.I think they are called bottom round flats in Austin. We also cut bottom round milanesa out of them.

I use ibp and have had a run on them. for a while, there was one in every case. I finally told the sales rep, I was going to box them up and send them back for credit if it continued. So far, so good

Yes, I've seen them before. I was told it was an injection site that probably became infected (dirty needles?) and instead of throwing away the whole flat, they just carved it out at the packing plant. Don't know what they're using in those shots these days, but I've seen significantly more scar tissue in that area in the past few years.

I have a friend who raises his own organic, clover-fed Angus and he's all full of government conspiracy theoriesno...

That's pretty ugly. The fact you guys have to deal with 'injection sites' scares the hell outta me. We don't deal with any injected product. Hell, half the time we get our flats in they're so cleaned up they don't even have the silverside on them. It's terrific.

an infected injection site is more towards the fat layer as apposed towards the bone...There is however a gland there typically its on the surface when you break down the hind however if the beef was recently ill the gland will inlarge just like a human (think tonsils) I'm goin with enlarged gland...Only cause like i said that would have to be one long ass needle to cause an infection there lol

I have ever seen it that is the part of the rump steak seriously infected with the injection that makes it to look like a fat it is hard to slice with watter spiliting out of it when cut.

Have them as well, not as much lately,as they are inspected before putting into the boxes as well. They should never leave the plant.

i haven't seen it with the hole in it. i have seen them full of puss though. its an infected spot probably from the needles. the flat comes from the rump. needles are usually injected in the rump. I would rather get one with a hole in it than full of white puss again.
