Beef ribs


How much do you sell beef ribs for?

Do they sell?

 

I'm not a meatcutter, but I love hearing about the business. I love meat.

Around me most stores sell beef ribs for around $5/lb, some as high as $8. One store always has a bunch, and usually asks $2/lb, and often has some marked down to 99¢.

I have recently discovered sous vide cooking (I made a controller very inexpensively) and beef ribs are great cooked that way. I often cook them for two or three days at very low temperature. The tough stuff just melts away, but I only let them cook to medium rare. Then I pull them out and sear them to give it a nice crust. Its amazing...

Specifically I usually see the bone in back ribs at the lowest price- and that usually what I buy.

The beef I sell is pricey to begin with- hormone/anti-biotic free pasture only all natural stuff. It's kinda a granola head store (think Whole Foods).

All that said- I usually put short ribs out for 6.99/lb.

Bone in or boneless back ribs (have not seen these outside the commissary) under $2 pound. Bone in short rib $6.50 pound. Boneless short rib $3.80 pound. Goes up and down a little in price.
