Fresh Ham, Rice and Drunken Beans

Start with 1 cup dried red kidney beans, 3-¬½ cups water, ¬½-cup dark rum, 1-¬½ cups unsweetened, canned coconut milk, 2 tsp. salt, -cup minced onions, ¬½ a habanero pepper (seeded and minced), 4 cups boiling water, 2 cups long grain rice, cup fresh, chopped cilantro (2 tbs., dried,) 2 cups diced, fresh ham steak cooked.


Rinse kidney beans, cover with water and soak overnight. Drain and rinse; simmer beans in the 3 ¬½ cups of water for 45 minutes. Remove from heat and add the rum. Stir in the coconut milk, salt, onions and habanero. Cover and simmer for 10 minutes. Add 4 cups of boiling water, stirring in rice. Bring to boil, reduce heat, cover and cook until water is absorbed and rice is tender, about 20 minutes then remove from heat. Fold in cilantro and pork . Cover and allow sitting for 15 minutes.
